Coconut Flour Tortillas


1/4 cup coconut flour

2 large Eggs

1/2 cup water

1 tbsp coconut oil

½ tsp gelatin powder (optional)

3/4 tsp salt

1/2 tsp cumin


1. In a large bowl, whisk all ingredients (other than gelatin) together until smooth.

2. Then add gelatin and gently fold it in the batter.

3. Heat a small skillet over medium heat.

4. Pour a ¼ cup of batter over skillet and immediately spread it all over the pan by tilting the pan in different directions. Cook for 2-3 minutes and flip over cook until browned.
