Coconut Chia Pudding


(4 Servings)

1 can (14 oz) of coconut milk

1/4 cup of chia seeds

1 tsp of vanilla extract

1 tbsp maple syrup (or stevia to taste)

Optional Toppings: almonds, walnut, pumpkin seeds, cocoa nibs, berries


1. Combine all of the ingredients in a bowl. Stir well and then transfer the mixture to a sealed container.

2. Let the chia seed pudding sit in the refrigerator for 3 hours or overnight.

3. Once it is ready you can separate it into 4 servings and add a your favorite toppings.
