Black Forrest Chia Seed Breakfast Pudding


It seems like everyone is loving this little seed of late. I must confess that I was late to the party, but now I’m definitely a chia seed fan!

It’s not that often a nutritionist will encourage you to eat pudding for breakfast, but chia seeds really exemplify the saying “great things come in small packages”.

Chia is loaded with healthy nutrients such as iron, magnesium and calcium. They’re also rich in Omega-3 fats, protein and fibre. All in all, an awesome choice for breakfast, or a snack throughout the day.

Prepare the night before, for a quick, easy, filling and delicious breakfast.


INGREDIENTS

2.5 cups unsweetened almond or coconut milk

1/2 cup frozen organic cherries

1-2 teaspoons of raw, organic cacao powder

10 roughly chopped walnuts

1 teaspoon honey or maple syrup

1 teaspoon vanilla powder

1/2 cup chia seeds

handful of blueberries

PREPERATION

1. Blend milk, cherries, honey/maple syrup, cacao and vanilla together in a blender on high until smooth. 2. 2. Pour the cherry mixture over chia seeds and walnuts and mix thoroughly.

3. Cover and refrigerate at least 3 hours or overnight.

4. Before serving, give the pudding a good stir and divide into 2 cups or bowls.

5. Top off with some blueberries
